"Hi, I'm Chef Rainer Wickel and I'm here today with Expert Village.com. Well, now we need to get our filets ready for grilling. So, as you can see we have two really nice choice filets right here, and there's really not much to this step. Basically what we need to do, right now, is we need to put enough seasoning on there so that it cooks into the meat so it gives it that nice flavor. So, the very first thing that we want to do is we want to put ground pepper on. Now, there's no real set amount that you need to put on here but what you just want to do is you just want to lightly sprinkle it onto the filets, just enough so it's covering the top of it. You know, you can put more on here if you want it to be spicier, but we just need enough just to barely cover the top. And the next step is we're going to put salt on there and remember I like to use coarse sea salt, I just think it's a better type of salt, and it's got the thicker granules so it's going to work a lot better when it 's seeping into that meat. So, just go ahead and grab your salt and go ahead and sprinkle it on top and you want to put about an even amount of salt and pepper on there. And remember, this is just to season the meat. And now what we're going to do is we're going to put some olive oil on there, now we're not going to put that much of the olive oil and remember I'm using extra virgin olive oil, so just go ahead and grab a tablespoon and we just want to dole it over the filets and what this is going to do is it's gonna bind with the pepper and the salt and it's gonna meld into the meat. So, just put a little bit over the top of it and just dole it out. Start from the middle and work your way out and then put that onto the second filet too. And, that's pretty much it. And this is how we prepare our filets to get ready for grilling."
