"Hi! This is Richard Buccola here in New York City and today on behalf of Expert Village, I am going to show you how to make stuffed peppers. All right while your peppers are cooking in there, remember not to overcook your peppers. We are just trying to get them soft so it helps with the cooking time in the oven. We are going to get a nice soft flame and we are going to start to brown this beautiful chopped meat. I got about 2 pounds here because I like to stuff my peppers, over stuff them. But remember if there are any leftovers, you can always just put it in the frig and get another pepper for the next day and re-stuff the next day, so don't worry about leftovers here. We are going to start browning that just working the meat with a nice spoon or spatula till all the meat is brown and we are going to actually drain all the fat. I started to just give this a quick turn and you can see it is still red and starting to brown; that is what you want. Keep your flame low, come back and we'll have it all browned and ready for draining. "
