"This is Richard Buccola here in New York City and today on behalf of Expert Village, I am going to show you how to make stuffed cucumbers. Just want to show you nice and hollowed out. Going to transfer them to a plate and leave them on the side. You are going to take your cucumber; if there is some juice, I try to use a spoon when I put it here; just scrape it out. I like the juice so I keep the juice in the bowl. It actually helps with bringing everything together. Make sure you always wash your hands first. Going to grab our cutting knife and just keeping the point down, just going to cut this down until we get into nice small pieces; nice and chopped. Basically a lot of stuffing things whatever you are stuffing, that becomes incorporated into the stuffing. You might use mushrooms and that becomes the stems like might be part of the actual stuffing. So here, same thing. Whenever we cook stuffed tomatoes, which I actually do and I also do stuffed mushrooms here on Expert Village. You will see that I use bits of the tomato. Today we are actually incorporating bits of the cucumbers and just going to chop them down to nice bites. Could actually cut one way; turn the board and just start cutting this way. Get them down to some nice bite size small pieces. Come back and we are going to start chopping up our onion, celery and getting our stuffing. It is real easy and real fast 15 minutes it is in the oven. "
