"Hi! This is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make fettuccine with pesto sauce. Hey! We're going to do a great thing today real fast, real inexpensive. It's pesto. I'm from New York City and I remember pesto being on everything. It was fish. It was on pizza. I remember they used to put like a vinaigrette pesto. They used to have a black bean pesto. Today we're going to do the typical pesto, which comes from Genoa, Italy. It comes from the word pestâ, which means to pound. They used to make it in the big mortar and pestle, the big wooden thing. Sort of like with the pharmacist does. Today, we're going to use a blender or whatever you have. You could have a purér. It makes it much better than just pounding the leaves. It's a great summer dish because it's main ingredient is basil. My downstairs neighbors are from Greece and he says that the Greeks call it the royal herb. It's the reason why I tell everybody to freeze their basil because it's not always easy to get it. When we come back, I'm going to show you the way I make it, but you could use different variations.
