Carrots contain more sugar than any other vegetable except the sugar beet. Thus in the Middle Ages when sweeteners were in short supply, they were often used to bake desserts. During sugar rationing in World War II, there was a carrot cake revival of sorts, which did not reach the United States until the early 1960s. What started as a fad in the U.S. Quickly became a full-fledged dessert stand-by, with the Food Network listing carrot cake with cream-cheesing icing as a top fad food in the 70s. This cake continues to be a stand-by to this day for many family gatherings.
