"After, when I saw the color, the intensity was I can see the viscosity of the wine. If you go like this a little bit on the glass, this goes now very slowly, this is a glittering, or we can say the viscosity of the wine, or also we can say the "church windows effect". After that we have to check the bouquet of the wine which is very important. It is a nice mature bouquet. It's a little bit, reminds me the earthy, the mushroomy character, slightly fruity like an over ripe plum or over ripe cherry or an, old high quality oak so it is a nice complex bouquet, mature bouquet. And then we have to taste the wine. We can feel the acidity, we can feel the fruity flavor, also the mature flavor, the tannin and it shows the complexity. Also the after taste, when you swallow the wine. If the wine is full bodied it is a long after taste, if it is light bodied it is a shorter after taste which is also very important. So basically we have to check the acidity, the alcohol level, the tannin and the flavor of the wine which can be fruity or spicy or it can be toasty flavored."
