"Hi! This is Mona for Expert Village, and we're here to make some Indian vegetable curry for you guys. Let's start out with the ingredients. A lot of ingredients, very colorful, but don't get overwhelmed. That's what makes it so flavorful and beautiful to look at and you will relish it. You can use any kind of vegetables. Today we are making potatoes and cauliflower. Basically, you can cook any vegetables. Potatoes and peas, cauliflower and peas, potatoes and spinach. Here we have the spices. This is coriander powder. This is dried coriander seed powder. This is turmeric powder. This is red chili pepper. We're also going to use freshly cut chopped onions, cut garlic, freshly cut and chopped green chilies and ginger. Now, as far as quantity goes, it depends. Everybody's different and some people like it very flavorful and very spicy. You have to basically experiment and see what you need. Last but not least, we do use coriander leaves. They are used for flavoring once the curry's cooked. It's very healthy. The leaves are very healthy and they give it a very fresh flavor. Let's go ahead and start making the curry."
