"Hi I'm Rachel Dayan for Expert Village now I'm going to show you how to prepare the dough into pitas and get it ready for baking. You can see that I waited and hour and 15 minutes and you can see that the dough doubled itself almost 2 1/2 it's size we take the dough out we put the bowl away and we're going to form it into a, we're going to roll it you can make in between 5 to 7 pitas and the the amount that you want the size of the pitas. You want it to be a kind of equal and cut them we're going to cut about 6 of them we're going to cut them into pieces after we cut them we're making a ball out of each of them. And then we're going to flatten the dough down, it should be 6 inches by 1/8" thick we're going to once we finish forming it we're going to put it in a pan and we're going to let it rise now for 1/2 hour before we put it in the oven. Again I'm going to cover it with plastic, plastic makes it sweat a little bit and that cause the yeast to rise quicker."
