"Alight, so our cucumbers have drained for just a couple minutes to remove some of the excess moisture. We're ready to make our cucumber sandwiches. So, again, butter one side to seal it. The same reasons: to seal the moisture like we did with the egg. Then to the other side, add another kick with something else. I like to take a little bit of cream cheese. I don't know, again, how traditional that is, but what the heck! It tastes good, why not? Not to thick. It gives another flavor, other than just the butter. Then we'll take the cucumbers, layer them on. More than one layer for sure. Finish all these up, actually. Looks good! Now, a little bit - because the cucumbers are a little bland - some salt, not too much. And just a dash of pepper. We put the top on, again slicing the crusts. Be sure you have a good, serrated knife to work with. Because otherwise the cucumbers can get quite slippery when you're cutting them. The fact that you put them on the paper towel, though, means that some of the moisture is gone. And therefore, a little less slippery also. One thing that helps, is because you did.. you took the excess moisture off with the paper towel, they're going to be slightly less slippery, so that's going to help too. So again, into four. It's great rectangular bread. Very carefully, this is where it gets touch and go. We have a clean break. A few little cucumbers to pop back into their place. The other good thing about the cream cheese is that it sort of binds, another glue. It keeps everything more or less together. See... we have a lovely little cucumber sandwich which we will place up on the platter with our egg sandwiches. Add that there... One more...Oh, there's going to be no room for that one. OK... we can add the second tier of the scones now, but now it's time to make the thumb print cookies."
