"OK, very thinly. If you want to do a lot of cucumber sandwiches very quickly, if you're doing a really, really big tea party, then the greatest thing is using a mandolin. Which is one of those, you've seen them, I?m sure in the cooking supply store, where it's almost like a V-shaped blade, and you just run the cucumber along it. But since we're not making that many, rather than getting it out, getting it dirty, and putting it away, just the knife works just fine. Now, cucumber sandwiches, because cucumbers have very high water content, you're sandwiches, if you make them too early, can get very, very soggy. So, this, just putting the cucumbers on a piece of paper towel, after , oh I don't know, ten minutes, just, you can flip them over on one side. The idea is just to remove some of the moisture. You don't need to get them bone dry. That wouldn't be very tasty. But, just a few minutes on each side to remove some of the excess moisture."
