"Okay so that's our six eggs. Hard boiled, peeled and into the bowl. And then I'm just taking, there's no special equipment needed here, just the back of a fork. Until you get it to this nice fine texture. Okay so those are sufficiently, see that, nicely mashed up. I'm going to put that all into a bowl, a larger bowl. Because of course we've got to add to our egg sandwiches. I'm going to take just under half a cup of mayonnaise for this. If you put a full half-cup it's a little too mayonnaise but it's more than a 3rd of a cup. One of those things. Of course if you happen to like yours very mayonnaise, that's totally not a word. You can go ahead and put the full half cup. To that I'm going to add just a teaspoon of Dijon mustard. A little bit of salt but not a lot because of course mayonnaise is salty in itself. It's one of the things you have to taste it to know. A little pepper. Not a lot. And today you can add pretty much anything that you like. I'm just going to add a hint of dill. And mash that all together. You could add some tarragon. You could do curried egg sandwiches. If you wanted to add a little bit of crunch which I often want to do I will put in a little bit of celery or perhaps a little bit of Vidalia onion. So that is all set to spread on our bread.
