Cut & Dice an Avocado

"So we are going to dice an avocado. So we've got an avocado half here so be careful with your knife. What we are going to do is make some parallel cuts without cutting too far into the skin of the avocado. We are really just using the point of the knife. Then we are going to make some parallel cuts this direction so that we have even squares throughout. We will simply take a spoon and take out the diced cuts that we've already made. We want to be gentle with them simply because avocados are a little fragile. After we have separated the diced cuts from the skin, they will separate on their on. "
