"So, all of our main course is done, for the backyard BBQ and we've come to the dessert. Now, I've decided to forgo baking, for today. I have some cookies, that I actually made up, a day ago and these are going to be perfect for some ice-cream sandwiches. The thing, with a backyard BBQ is, you don't want to have any fussy desserts so even an ice-cream cake is messing about with utensils and with plates, make it really easy. So, either you can just make ice-cream cones, you could do popsicles, kids love popsicles, or put together a platter of fruit but this little ice-cream sandwich is very cute. You want to let your ice-cream just sit out of the freezer for a minute or two, well a couple of minutes, just because it's very difficult to work with. This is just Neapolitan, that's why we're getting all the funny colors in there. And sandwich, right on top "a little bit of ice-cream just pat that in," and these, you can keep frozen, you can prepare them ahead of time and then just bring out a big platter of them but keep your desserts really simple. And, that's it. "
