Alright so we got the chicken that has been marinading in the barbecue sauce overnight. That is ready to go right on the piping hot grill. I'm going to place these right on the grill. Listen to that sound! You know the second it hits the grill you can smell the barbecue sauce. Try as best as you can to let the marinading juices drip off because you will see the flames ignite a little bit due to the sugar content of the sauce. So I'm just doing chicken thighs today. Of course you can do any kind of meat that you like. I want to leave the skin on this time because it kind of protects the meat from drying out too much. Of course when you are using a bone in cut of meat you need to allow more cooking time. One thing I even seen as been preboiling your meat so it spends less time on the grill but as long as we reduce this. I'm not going to start basting right away, I'm going to wait until these have turned over. I'm going to obviously close the barbecue lid. Let that cook, flip them and then begin to baste right at the end so we get that nice dose of barbecue sauce and then this would be ready to plate.
