"Now we're going to make our first course, actually. In Salad Compose which is just composed salad, literally translated. And it just means that you're not mixing it all up into a big bowl and combining the dressing and topping as we would in most American salads. And this is an Endive, it's a Belgian Endive. It's got a slightly bitter taste to it. Actually I'm going to take some of these bigger leaves so that the sizes are all nice and equal. Ok, so that's one plate of the Endives. I'll cut a few more here. And then to go along, because, remember how I said that that is very, it's rather bitter. So to counter the bitterness, I'm going to put some very sweet pear with it. And again, arrange it artfully. That was one thing I couldn't get over when I was in France. I didn't expect to be, sort of, in awe of the salads. I expected to be in awe of the pastries, the cheeses, the sauces and what not, and yet it was the salads that I really really fell in love with. So nicely decorated."
