"Now we are going to demonstrate the basic procedure for sharpening a knife on a tri-stone and what you want to do is start off of the core side of the stone first and I've got some honing oil in and just want to put a little bit of that on the stone before we get started. I've got a small scimitar knife that looks really similar to a fillet knife to show you the sweeping motion that we need to use because this blade has a natural sweep on it. First thing you want to do is just fill with your thumb very lightly the actual bevel that you are trying to sharpen on and that is going to give you a really good indication of the angle that you want to use when dragging it across the stone. Always go from the base of the tip of the blade in a nice smooth stroke back and forth. Be careful not to whiff the knife right and left. You want to keep all the strokes similar and uniform so that you don't mess with the edge and that's the basic procedure for sharpening. "
