"All right now we are going to demonstrate how to cut butter into a sugar and cutting is a term that is used in a lot of baking recipes. I've got 2 sticks of butter that has actually already been softened. You can soften these at room temperature or you can put them in the microwave for just a little bit to make them soft. The reason being we want soft butter to cut into the sugar instead of putting cold butter in pieces because it won't incorporate the way we want it to. So I've got white sugar, brown sugar. We'll pour those into our mixing bowl. Before we actually hit it with the butter, I'm just going to turn this on low speed to start with and then we will speed it up. All we are trying to do is hit all one color so we are blending the two sugars together first and now we are actually going to cut the sugar into the butter as I mentioned before. Instead of throwing the whole stick of butter in it at one time, all I am going to do is break off pieces with my finger so that we incorporate it into the sugar a little bit at a time and that is essentially cutting butter into sugar. "
