"All right now we are going to demonstrate procedure for scrambled eggs. We've got two beaten eggs inside our bowl here and I am just going to pour these straight into a non-stick Teflon sautee pan which has just a little bit of clarified butter in it. The spatula that I am using is usually used for pastries and such but it works really well. It's just a rubber spatula. For one thing, we don't want to scrape our non-stick Teflon but for another we just want to gently fold these eggs over. We use about a low to medium heat because we don't want to cook the eggs too fast. We are using a folding technique with our rubber spatula so that we can actually increase the volume of the eggs and fold some air into them so that they stay nice and fluffy. So the finished product should resemble something like that, nice and steamy. As you can see, they have a nice opaque color to them. So that is the procedure for fluffy scrambled eggs. "
