"So our picadillo mixture is finally complete ready to go. I'm going to set that to the side. We're going to finish off our poblano peppers so that we can get them stuffed. My first thing is once again you want to make sure that you are wearing gloves for this simply because you don't want your hands to burn. I've got three poblano peppers here. I've got them on a sheet pan because we're going to bake them in the oven once it's all done. I have my vegetable oil. What I'm going to do is I'm going to drizzle the outsides of these with vegetable oil. I know that there is a few seeds on there. That's okay. I'm going to go ahead and pull those off, so don't worry about that. Now what I'm going to do is going to take my hands and I'm just going to rub the outside (rub off those seeds) with the vegetable oil. That is going to keep it nice and shiny on the outside and help cook up a little bit. Okay, there is one. I've got the other one. These smell amazing. A poblano pepper is actually are really great peppers if your going to fire roast some of these to freeze. So if they are seasonal in your area or you can only get them when on vacation or whatever the deal is, go ahead and get a bunch of them. If you're going to waste them or go bad, go ahead and fire roast them. Peel them. Freeze them. Then you'll have them all year round. These guys are ready to go. "
