"So we got our empanadas on the sheet pan and our next and final step before we put them into the oven is to get some more of that egg wash and we are going to egg wash the outside of our empanadas. You want to make sure that you get the outside as well as the top, like I said earlier this egg wash is going to make your empanadas nice and brown and shiny on top. Once these are folded over this will help the fold to stick as well, now we are going to do the other ones so make sure that you get the outside edges. These look really good. I don't know if I mentioned it already but we got our oven set to four hundred and twenty five degrees and as you're working with puff pastry you always want to take it from a cold state to very hot state very quickly. That will really help increase the level of puff in our puff pastry, so that is what we are going to do. I'm going to put them in the oven, if you wanted to you can take them from this point put them in your fridge, refrigerate them for about ten minutes. Then pop them directly into your 425 degree oven so they will cook for about ten minutes or until they are a nice light golden brown on the outside."
