"Okay so we've got our garlic and our onions going and our next part is to the get Chorizo going in a pan. I want to talk a little bit about what it is because it is a little bit of a unique product. Typically when you hear the word Chorizo now days, it is in reference to Spanish Chorizo and that is a little bit of a different product because that product is a dry Chorizo and this is actually what we call a Mexican Chorizo. It is more of a raw sausage product and it is made with pork typically. You can see it with like a pork, beef, all different kinds of things. It just depends on where you buy it. A lot of places depending on where you live, make it fresh. Our grocery store has fresh Chorizo made everyday and it is wonderful. This particular brand has different seasonings to it. So it is ground pork typically with different kinds of seasonings like paprika, garlic, onion. You can sometimes find it with fennel, oregano all kinds of flavorings and as you see here, it is a raw product and you have to cook it to eat it and it is in a casing. Check your casing whenever you get it to make sure you can find out if your casing is edible or not. "
