Also called Bacalhau, this dried cod was once a staple of Portuguese diets, but has since become a delicacy as cod fish has become more scarce in the world. "On behalf of Expert Village my name is Lizbeth Muller and today I'm going to show you how to make Spanish style bacalao. I'm going to show you the ingredients now to Spanish style bacalao. Bacalao is something that is done in many different islands actually. We like to use the bacalao and we use the one that don't have any bones it it. We call it espinas so when you find this you would notice that it going to be in a package like this sealed and it comes in all different sizes. You want the one that has a little bit more bulk to it, it would come in a whole fish and it is dry. Bacalao is a dry fish okay it has already been dried out, salted and it is in the fillet style. So this is the one ingredient that is really the main ingredients which is bacalao, fish. Then we have onion, we have a red whole pepper, and a green pepper, a Idaho potato, tomato sauce can tomato sauce. It can be Spanish style but I like the plain one right now and olive oil."
