"Hi! I’m Louis Ortiz on behalf of Expert Village and today we’re going to show you how to roast garlic. It’s a fairly simple procedure but the reason you need to know how to do it it’s simply because when you get a fresh garlic clove like this a fresh head of garlic actually roasting in the oven and draping it with a little bit of olive oil just renders a really nice incredibly smooth mellow round flavor and the garlic once it’s cooked in the oven this way turns into a really soft kind of paste which is excellent to cook with, to season meats and all different kinds of proteins, so it’s a real nice thing to know how to do it’s a fairly simple procedure. I’ve got a chef’s utility knife here and what I’m going to do is just this is the base of the head of garlic actually and this being the top so I’m just going kind of slice the top, now before I do that I’m slicing so that I’ll cut the top of each of the little bulbs of garlic off so that they’ll be exposed and allow me to put the olive oil on the top of those guys so they’ll actually soak it in it makes a real nice finished product once it bakes in the oven. So just be careful with your fingers just take it nice and slow and cut down there so that you expose the tops of the cloves just like that okay, so I purposely cut the tops of those off, I’ve got some foil here just regular aluminum foil and I’m going to make a little wall for this so that I don’t waste my good olive oil and I’m going to use some extra virgin olive oil and I’ve got my oven behind me pretty heated already to about 425. Alright so I’m going to hold this closer so it doesn’t spill everywhere and just drizzle this olive oil on the top of those exposed cloves and you’re going to leave the skin on the outside we’ll do just like that and I want just a little bit running over the edges not a whole lot, so now you’re going to have this wonderful roasted garlic paste of sorts it’s been infused with this really nice flavor of extra virgin olive oil and because it’s fresh garlic it’s going to be so much nicer than any of the garlic that you’ll buy in a jar that’s been preserved and such, so we’ll go ahead and place that in the oven and we’ll come back and I’ll give you a look at what the finished product is going to look like."
