"Hi! I'm Lori Schneider from Figs Catering out of Austin, Texas. Today on behalf of Expert Village, we're going to show you how to make mini turkey and parmesan burgers are pita bread. Now we're going to go ahead and start making our turkey burger mix. To do this, I've got some Italian parsley. Italian parsley is a really great fresh herb that just lends a really fresh flavor to our product. However, you don't want to confuse it with cilantro. A lot of times in the grocery store for whatever reason, they always put it right next to the cilantro and it looks exactly like cilantro. Be careful and make sure you read your labels, and make sure that you smell to make sure that it is parsley whenever you pick it up in the grocery store. Sometimes I do know it's hard to get, so if you can't get Italian parsley, or also known as flat leaf parsley, you can substitute it out with curly leaf parsley. Both will lend pretty much the same flavor or a very close flavor, so don't hesitate to use that if necessary. What we're going to do is go ahead and pull off a few leaves of our Italian parsley's stem here. As you'll notice, this stem is rather large and it's going to be rather woody and bitter in flavor. We don't want that in our mixture. We're just going to pull off the leaves and make sure that we leave those woody stems behind. I've got my Italian parsley. All I'm going to do is roll it up in a little ball and with my knife I'm going to run my knife through it so we get some nice small leaves. You want it small so that it will evenly disburse through our turkey mixture. I've got about a tablespoon of chopped Italian parsley. I'm going to add it to my one pound of ground turkey. "
