"On behalf of Expert Village I'm Laura Banford. I'm going to show you how to make some delicious Island chicken. Now we are going to make the delicious pineapple vinaigrette that goes over our Island chicken platter. I showed you the ingredients. First we are going to take about a 1/3 of a cup of canola oil; this is a low volume oil dressing. A 1/4 cup of rice wine vinegar, pineapple coconut nectar; it comprises the bulk of the dressing, some Dejon mustard; about a tablespoon of Dejon mustard. A drizzle of honey; any kind of honey you have in your pantry. There is sweet sour fruity, then a little bit of garlic. Then I'm going to zest my lime; lime zest of any citrus fruit has lots of flavor more than the juice itself. It gives it some color too, I'm going to slice my lime and give it some lime juice. Then I'm going to whisk it all together, incorporate the mustard, garlic, lime juice and it smells even better. When we come back, we are going to cook the bacon. It's going to be crumbly and crispy and it's going to go on top of our Island chicken platter. See you then."
