"On behalf of Expert Village, I'm Laura Banford. I'm going to show you how to make some delicious Island chicken. Since this dish is inspired for Hawaiian Island, obviously it has to include pineapple. We're going to garnish our platter when we put it together with fresh pineapple. This is a Hawaiian pineapple that pineapples come from Hawaii and the Dominican Republic. This is a Hawaiian pineapple. First cut off the head; you can use that for garnish. I'll probably do that later. Then cut off the bottom base and then we are going to take our pineapple knife which is curved just to suit the angle of the pineapple. We are going to cut the skin off trying to preserve as much of the juicy fleshes possible. Then we are going to cut around the center, the center is tough and woody this circle right here and chewy not really edible so we are going to slice around that. I can smell it it smells delicious and we'll dice that up and get that ready for our platter and when we come back we are going to prep the onion, see you then."
