"One thing that I'm noticing and I'm glad it's happening and point this out as you work your way up your baking dish gets wider using stages just the natural curve in this dish, so I'm just going to start and pull this one over a little over all the way to the edge and you'll see there's space right here so we're just king of overlap a little bit. So this next sheet of filo dough were just going to just stagger them a little bit to make sure we cover everything it won't effect the outcome of the dish, it won't effect the layers really it won't change the outcome you see how we kind of staggered it. So make sure we cover everything I'll do that from right here on out staggering to make sure we cover every part of the dish, and it works out fine that way it won't hurt it. And sometimes this is such a I sometimes loose count of where I am on how many filo sheets I've used in each section you know again I use 6 sheets instead of 5, that's okay. As long as you handle the filo sheets gingerly they really won't matter were going to make this one a little closer to this edge, stagger that that's our third sheet remember that. (Third sheet of the fifth layer like if you were to say the layers of the cinnamon sugar mix) We've put down 3 layers of the cinnamon sugar mix at this point, this is very dish so we might be here for a while. Seems like my moms original recipe said you only use you know, I just want to tell you what to do if it does tear the filo dough does tear because it will happen it is very fragile, it will do this you can see it's kind of sticking together right here the 2 sheets see how that's just kind of ripping well, life goes on. If it does this I'm not going to use this sheet there's so many filo dough sheets in a package or box, if you loose 2 or 3 your really going to be okay, you see on this one I just laid down the edges are just a little bit torn that's okay that's not enough of the sheet to make any difference, put some butter on it it'll stick to the other sheets it'll be fine."
