"On behalf of Expert Village my name is Elizabeth Muller and today we're making Chicken Fricassee Spanish Style. Now I'm cleaning my board because I just cut chicken on it and I like to clean the board. It's very sanitary. You don't want to cut your vegetables after you've cut chicken on the board. This is why I use a plastic board also. I don't like wood. Usually wood gets chipped and the bacteria goes ahead and gets into the wood and then it can create a problem. So I already cleaned up my board and I'm taking it over here. I'm going to dry it and start cutting up my vegetables. I'm going to cut my vegetables really small. I'm going to dice my vegetables really, really small. I don't like my vegetables really thick for this dish, I like to keep it really small. And, cut it long ways first like this and then I'm going to dice it this way. Really tiny, really small. You can also use your blender or you could use a food processor to cut it up or chop it up small so it takes up less time for you."
