"On behalf of Expert Village my name is Elizabeth Muller and today we're making chicken fricassee Spanish style. I'm using chicken breasts for this meal. You can use a whole chicken cut up or maybe drumsticks. This is the way I like to do it because it's a fast meal and it's very quick or cook faster if it's chicken breasts. If it's chicken that has bones it'll take a little longer to cook and if you are cooking a meal after work well you don't want to take that long. So, I'm going to wash my chicken with some water and I'm going to drop a little bit of vinegar. You can use lime juice if you like but I use vinegar. I'm going to drop a little bit of vinegar in there and just mix it enough to take any slime or anything on there. If you had skin you can take your skin off. Some people leave the skin on for their chicken for this kind of dish, but it gets a little oily for me and I like a little healthy. So I'm going to take this over here, bring it on my cutting board."
