"Part two of what we are doing today with our shrimp and creamy grits is we are going to go ahead and start our sauce. So I have taken a third of a cup of Smithville ham/bacon we are going to add these to our skillet lightly let it brown. So this is part one we are to make sure we have a low heat as well always check that. And we don't want to actually crisp these we just want to mildly get them brown which we have done right there and we are going to our next step which is adding the heavy cream. That we are going to be folding into this. We have right here this is actually store bought just table cream you can use half and half, you can even go with a low fat cream as well. We are just going to keep this at a light stir, we are going to add our Worcestershire sauce as well to give it a little flavor. And I just generally do five or six squirts you can definitely eye ball this like I said wahtever works for you. If you are very conscious of what you are adding you can definitely weight this out I would say it is a third of a teaspoon and once again your are just going for a little bit of flavor which this is going to add to it and be careful to taste as you go along the way. What we want to do with this is we want to let this reduce down so it actually becomes a sauce. This is going to actually cook for probably about four to five minutes. We don't want our sauce to thicken up, we just actually just want it to form and we are going to add a pinch of salt which we have right here. You can hear our grits bubbling over there. A pinch of salt and we are going to go into our next step which is adding our asparagus tips our roasted corn and our half cut roasted tomatoes. "
