"So here we are with our cucumbers I'm going to show you how to do 2 different kinds of cucumbers depending on your area and time of year this is what will be available. One is your standard cucumber I think this select cucumbers 3/ $1 or 3/ $4 depending on whether its February or August and these we need to peel usually there oiled the skins are oiled and it does make for tasty kimchi. So I'm going to peel them and you can get a sense, if it's the middle of winter and the cucumbers aren't as fresh as you want them to be you can take a little extra layer off of the outer like so, just use a potato peeler or a vegetable peeler whatever works the best for you, and were going to snip off the ends, and there's one cucumber. The other kind of cucumber which right now is September and these happen to be in season in New England our pickling cucs, pickling cucs are nice cause they taste so fresh and the way you want to peel them is you don't want to peel the entire skin off of the cucumber, and what I do is make my little strip cucumbers take off the ends just like that, and you'll get some of the nice crunch of the texture of the skin in there. They're nice and clean and that's about it take our peels and discard them, both are going to be equally delicious."
