"Today we're going to talk about how to pick out a fresh green bell pepper. What you're looking for is that nice dark green color like this one. Nice, hard, you don't want any soft spots, definitely want them to be nice and hard and dark green. You want to stay away from any lighter yellows like that and any kind of soft spots. Definitely want to stay away from any, a lot of times at the bottom they may have little soft spots like that. You want to stay away from those, a little too ripe. Any definite big mold spots like that you want to stay away from. You're looking for something like that one right there. Nice, hard, green, dark green. Another thing to stay away from is these little wrinkles, any kind of soft wrinkles like that, probably a little too ripe, or maybe it was damaged. But that nice dark green one is going to give that nice crisp taste. It's going to be very crispy when you bite into it. Any of the yellow ones going to take a little longer to ripen. Just going to have to wait on those. We're looking for that nice dark green, hard bell pepper."
