"Today we're going to talk about how to pick out a fresh head of cauliflower. When looking for cauliflower you want to stay away from anything that's too white. It's not quite ripe yet. You want to get them a little bit more yellow like that right there. See compare that to this one right here. See that one is pretty white and that one is starting to turn yellow. That's what you want. You do want to stay away from anything like that. Any kind of brown spots on the outside. You want a nice heavy one. Heavy is going to have more meat in them. When you're picking out a good fresh head of cauliflower you want to stay away from any of these kind of brown spots like that. It could possibly be from the amount of condensation in there settling, starting to oxidize and just, starting to basically rot out that part of the fruit. You want to stay away from that. You want to just stick with the nice starting to turn a little bit yellow like that one. Just grab a few of them on the table and you know, compare the color on the top. It's going to be a little too white here. Nice and yellow there. You want to go for the yellow ones."
