"Today, we're going to talk about how to pick out a fresh head of lettuce. When looking for a fresh head of lettuce, you want to give them a nice squeeze. You want a nice, solid head of lettuce. You don't want anything that's going to push in on the bottom on that bottom core, right there, if you push on it, gives a little bit, it's no good. It's been out too long. It's too ripe. You want them to be nice and solid like that. And you want to stay away from any kind of brown on them, a little bit of brown on the outside is not too bad, but you just want to make sure that the whole thing is pretty hard, solid all the way around, especially on that bottom part and definitely a nice green is better than any kind of brown or any white that may not be quite as ripe. Another thing you want to take a look at when you're trying to pick out a good head of lettuce is the weight. You want to grab a few of them on the table, and just kind of you know, compare the weights on them. You're looking for a heavier one. Anything that's nice and solid like that and it doesn't have too many darker leaves on the outside. It's nice and heavy. That's going to give you a nice, crisp lettuce for like a salad or anything. It's something like this, that's got a lot of that loose, mushy stuff on the outside, it's not quite as heavy as that one, you want to stay away from. Just a little too ripe, you're going to have to, you're going to end up losing more of the vegetable then where as you pick one like that. It's a little more heavy."
