"Today we're going to talk about how to pick a fresh eggplant. This one right here is very nice, very smooth on every side. It's not too firm, not too soft. It's kind of a preference thing when it comes to eggplant. There will be some really, really soft ones. The darker ones are going to be a lot softer, like that, as compared to these that are a little bit more with the light purple on them. It's a little bit firm. It's just a preference thing, whether you like your eggplant soft or hard. A lot of misconceptions with the eggplant. Anything like this, with the little scabs on it, it's just on the skin. It's not really going to affect the vegetable that much. Also, let's see. Here's one with the kind of wrinkles, like that. It's going to be really soft, a lot softer than, like, just the normal dark, soft ones. With the wrinkles on them, they're going to be a lot softer. Once again, just a preference thing. That doesn't mean that it's not ripe or bad. It's just a little bit more ripe than one of these. It's still going to be good. It's just a preference thing. But that-wrinkles and scabs, like that, is just on the skin. You peel the skin right off. It's not going to affect the vegetable that much. It's not that big of a deal. But, most people go for the medium; not too dark; not too light; not too firm; really nice, soft, like that, without anything on them. That's what most people are going to pick out. But it's really not going to affect it that much, if it's got any scabs on it or any soft spots. It's just a preference thing."
