"Hi, my name is Karl James owner of Creolesoul Catering located in Round Rock, Texas and on behalf of Expert Village I'm here to show you how to make hog head cheese. Okay, we let our both dishes of our head cheese refrigerate for the past 5 hours and you can see that they're pretty gelled, this is the plain and this is the hot. This is a slice of it. I guess that it's used as lunch meat and you could find it in almost every country, a version of it. Like I said in the UK and in Scotland and Ireland, sometimes they use a cows head a calves head, sometimes they use sheep. The Pennsylvania Dutch does it a different way sometimes they use sheep also. Louisiana of course they use the pig head, sometimes they use the feet and the ears because you want the pieces of the pig that will give you this gelatness feel, it's the cheese. Anyway, so here we have it plain, hot hog head cheese, give it a try."
