"Hi, my name is Karl James owner of Creolesoul Catering located in Round Rock, Texas and on behalf of Expert Village I'm here to show you how to make hog head cheese. Now, we're going to look at our green onion and give that a rough cut. It too is going into that broth, it's those vegetables those onions, that garlic, that celery and now the green onions that's going to be in there with those ears boiling away for the next 2 hours. So, yet it looks like green onions now, but by the time you're done you won't recognize them. You won't be able to tell what's green onion and what's celery. We're going to use the whole green onion, both the white end and the green, because the one thing it will do is give you some faint color in the head cheese. So anyway, like I said rough chop on the green onions and we'll put that right there in that pot and move on."
