"Hi, my name is Karl James owner of Creolesoul Catering located in Round Rock, Texas and on behalf of Expert Village I'm here to show you how to make hog head cheese. Now, we're going to cut our onion up. This is also going into that boiling mixture with our ears. As with the celery they don't have to be too fine cause they're going to cook to basically nothing and help flavor the gelatin. I'm using regular brown onions. If you wanted to you could use shallots. Like I said this is a dish found all over the world and the French use a lot of shallots in their version. So we have our onion cut and we'll move on."
