"Hi my name is Karl James owner of Creolesoul Catering located in Round Rock, TX and on behalf of Expert Village I'm here to show you the sweet potato pone recipe. In addition, to the lemon zest we're going to take an orange and we want some of that orange zest too. The thing about orange zest you have to be careful cause you don't want any of that white skin underneath, it's very bitter. We're just going to do the same thing that we did with our lemon but, be very careful cause we don't want any of that white portion. We just want the orange. We're going to do basically an equal amount of orange and lemon zest. That citrus flavor is going to add a nice refreshing flavor to the overall dish. So you see I'm just moving it around cause I don't want any of that white underneath (bitter white) portion. That looks pretty good. Now here we have our orange zest. We just did our lemon and basically what we're doing now is prepping our items before we start to use them. So we got our zest done, both our lemon and orange and we'll move on to the next step."
