"Hi my name is Karl James owner of Creolesoul Catering located in Round Rock, TX and on behalf of Expert Village I'm here to show you the sweet potato pone recipe. In this step what we are going to do is take a lemon and we're going to grate a little bit of the zest cause we want the lemon zest. We're just going to run it across the grater here. Basically we just want the outside skin. I say we're going to use probably about 1/2 teaspoon of zest. We're just going to run that across our grater. We just want the yellow skin on the outside. This zest adds a nice fresh flavor and from this one lemon we should get enough zest. Another option you have also is later on in this recipe if you like you can add a little lemon juice to it. So that the lemon basically doesn't go to waist. I think we have our lemon zest done and ready to go. See you back at the next step."
