"Hi, my name is Karl James owner of Creolesoul Catering located in Round Rock, TX and on behalf of Expert Village I'm here to show you a crawfish boudin. So in the pot now we have the crawfish, trinity, the Serrano peppers, tomato sauce, flour and a little bit of oil. Now it's time to put that seasoning mix that we mixed earlier. Which of course had a little kosher salt, black pepper, some creole seasonings, a little garlic powder, sweet basil, dry thyme, sweet basil was dry also. So I'll let those seasonings mixed well in here and as you can see our mixture is really kind of thick but we want to get all that mixed together. Okay, scrap the sides down, and we got our temperature, we're using an electric skillet here and we're about 200-250. That seasoning is now in lets move on to the next step."
