"Hi, my name is Jenny Villagomez and on behalf of Expert Village I’m going to show you how to cut your tortillas for your Chilaquiles plate. As you can see these are corn tortillas, not flour, flour tortillas are pale and bigger than corn tortillas. So we’re going to cut our tortillas into vertical strips, make sure you cut them thin and not wide unless you want your chips to be extra crunchy. Turn your tortillas with your palm and cut through the middle. Look at these perfect strips. Now for a more traditional chip, the triangle chip. The method to this strip is to simply cut through the middle of the tortillas with a large knife using your palm as a weight to cut through all of the tortillas evenly. First into fours, then six and finally eight triangles, make sure that you don’t cut more than five to seven tortillas at a time, if you try to many you’ll end up with mangled pieces. "
