Hi, I'm Chef Donn O. and welcome back where we are making a really nice dish. We are making baked stuffed shrimp. So right now I have the shrimp devained and shelled. That is ready to go. I have my stuffing which is a mixture of crab meat. Whole wheat bread crumbs. Mirepoix which is our carrots, celery, and onions. One egg, a little bit of salt and some lemon juice, it is very good. Oh and rice you can see the rice in there. The rice and the bread crumbs work as a binder, it holds together plus it adds flavor and texture. Here we go, we are going to stuff some shrimp. What I usually do I use a sauce pan, a little bit of water on the bottom and then our shrimp. You can see that I have already open up the shrimp, I'm going to open it up just a little more like so. Just like that. Then it will go on the pan like that so with the tail over the stuffing. So what I'm going to do is line these up almost like factory work we are going to manufacture stuffed shrimp here. Just pump them up. I believe we have twelve here. You can see that I'm opening up the shrimp just a little more then the flesh side down, tail up. They all face the same way and we always keep everything the same way and that will make the work a lot easier. That one is good, good. So what I need is twelve crab meat stuffing balls. So making the ball like so I'm going to place that on the shrimp like so. Fold the tail over the top just like that and then push the bottom of the stuffing down just to secure it to the shrimp. Very easy dish, it will impress your friends and it is easy and it is fun to make and best of all it is really good.
