"My name is Jane Murphy and I'm the chef at Zen Clay Cafe in Morgantown, West Virginia and I'm going to be showing you today how to make a heart healthy eggplant sandwich on behalf of Expert Village. The third step is taking your slices and laying them on a cookie sheet or some flat surface. Then our fourth step is going to be getting some salt and sprinkling both sides of the eggplant. Be sure that there's a good amount of salt on both sides and we are going to let it sit for 30 minutes. This brings out some of that bitterness you may have had in not properly prepared eggplant before. So we'll take a break here and let it sit."
