"Alright now the wine has been sitting digesting and it's your first day. It's the end of the evening and you're getting ready to go to bed possibly and now this is the important time that we want to remember to stir the wine. I have this wine covered with a towel, and that keeps any fruit flies and contaminants trying to get in because the lid on this container is just on loosely. So we'll take the towel off and we'll open the lid, as you see it's just barely sitting on there. That's so the batch can breathe because there's a lot of gases coming out of here. So you're going to stir the wine. What we want to do, is we want to stir the wine counter-clockwise. Get it stirred up really good. So you stir the wine and then you're going to let it sit there; you're going to put your cover back over your wine. And again, this is to keep any contaminants, because this lid is on very loosely so that it can breathe. So you don't have, you can use any old towel and it's best to put a towel under your digestive bucket so that you don't ruin your table or where ever you have it, and you place that over there."
