"On behalf of Expert Village this is Ian McSwain of Passion Foods in Miami, Florida and today we're showing you a quick and easy Mexican recipe. Today I'm going to be making guacamole. So ask a chef of mine, a friend of mine who's a chef, you know what can I do with a hundred of avocados here, they aren't ripe and I need them to be ripe in a couple of days. So I asked him about what can I do to speed up the process of ripping, ripping use of avocados he told me to take them out of the sacks. They're in mesh sacks, place them into paper bags with bananas in them and the enzymes from the bananas peels not only ripen avocados but other fruits too. So if you ever have a problem with unripe fruit you can place them in a brown paper bag, I don't know if it has to be brown but a paper bag and add a banana and close it up and keep it out of room temperature and it sure does speed up the process."
