"On behalf of Expert Village this is Ian McSwain of Passion Foods in Miami, Florida and today we're showing you a quick and easy Mexican recipe. Today I'm going to be making guacamole the first thing we're going to do is fry the tortillas I don't like to serve them hot with guacamole guacamole is cold usually served cold at room temperature and you don't want the guacamole to start turning oxidizing on a hot chip. So we're going to fry these salt them and let them cool and then we'll begin th guacamole. So I have here I would say what 4, 5 tortillas and just take a sharp knife and cut it into triangles make a few cuts just fine, you can even cut them smaller but this is a good size. Take your tortillas test the oil to see I don't have a thermometer it's good to have a oil thermometer just to make sure that your oil is not to hot or not to cold, but which you can also do is have a tester and that looks about right."
