"So first we will peel down our russet potatoes. These will be for the duchess. Duchess potatoes are basically dry so we are going to boil these until they are tender and then we are going to finish them off in the oven. Once they are completely dry we add egg yolks and butter and we finish it off with salt and then a little bit of nutmeg and then the duchess potato. You can use a peeler if you like. Since I have this boning knife on hand I would just as soon use that, it works for me. Then we will cut the potato lengthwise into thirds. I am splitting each one. Make them large dices. O'kay now I have the water heating on the back burner and we will bring that to the potatoes and carefully add the potatoes, don't splash yourself and back to the fire."
