"This is David for expertvillage.com. We are in the process of deep frying a turkey, the Cajun way and right now we are ready to tie the legs together so this will literally fall off the bone. So you do need to have the legs cut, so get regular kitchen twine; that is all you really need. Nothing with plastic in it or like that will melt. So I just cotton twine is fine. So cut off the length of it and what I like to do is tie one of the legs just around like so and wrap it and then you can get the other leg and wrap it around and through. It doesn’t matter how many times you do this but I would recommend at least 4 or 5 because it will go into this oil for about 40 minutes. Once you get that all tied together, like so and cut off any excess if you like and you are ready to use the coat hanger. Now this is probably what you were wondering about earlier. You just want to get your regular coat hanger and this will serve as your holder that you are going to put your turkey in the oil. So what you do is run it through the neck cavity, like so and pull it through and then right under the wire, so use as a handy little holder you can have to drop into your oils very slowly. "
