"Hi this is Dave for Expert Village and today we are roasting a pig. Okay now the pig is done, people are enjoying it and what you want to do to clean up your caja china is let the coals cool down before you dispose of them. Really important cause ignite anything. So now you can let the fat solidified in the pan and it makes it more easier to clean. You just take a scraper of any type and just scrap that down into a garbage bag or whatever and then what you want to do is go around to the entire perimeter of the caja china with a sponge and some cleaner a little bit of cleaner and that would be about it. As you see it keeps very clean as it cooks through and you can also use this for pork shoulders and turkeys and chickens or anything so it is a great little oven outdoors."
